Karin's Pad Thai
This is delicious. If you don't like shrimp, you can omit it from the recipe. Don't make any other substitutions, or it won't taste the same!
Ingredients
Sauce: 1/2 cup chicken broth 2 tbsp. fish sauce 4 tbsp. catsup 4 tbsp. sugar 1 tsp crushed red pepper
Meat/Shrimp, etc.: 4 tbsp. vegetable oil 2 tbsp. minced garlic 1/2 lb. ground pork 1 shallot, finely chopped 1/2 lb medium raw shrimp, cleaned and deveined 1 egg, lightly beaten
Garnishes 2 lime wedges for each plate 1 cup of bean sprouts 2 scallions, sliced diagonally 4 tbsp. chopped peanuts 4 tbsp. fresh chopped cilantro
3/4 lb egg noodles
Instructions:
1.Make the sauce and set aside. 2.Start the egg noodles. 3.In a large wok or frying pan, add the oil and garlic, and cook for about a minute. 4.Add the pork and the shallot and cook for about 4 minutes. 5.Cut the shrimp lengthwise in two and add to the wok. Cook until the shrimp are pink (about three minutes). 6.Add the sauce to the wok and toss gently. 7.Add the drained noodles to the wok and toss gently. 8.Add the egg to the wok and toss gently. Cook for about four minutes. 9.Serve garnished with cilantro, nuts, and scallions. Each person should squirt the lime juice on their noodles right before eating. - Serves four. |
